sea bass with homemade tomato puree

This is one of the tastiest dishes I make.  My guests always leave raving about it.  It is so simple to make and the sauce tastes like it took hours.  You can substitue salmon for the sea bass.  JJJJ aka: Depends on my mood.
What I love:He looks good in a cowboy hat or a business suit and wears them both daily. But not together, that would be creepy.
Hobbies: Building furniture, remodeling homes, playing sports with our kids, laughing with me. Seriously.
actually likes it better that way.

Sauce Ingredients
1 can whole tomatoes
2 tablespoons olive oil
4 small cloves garlic
1/2 cup onion
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar

Sea Bass Ingredients
2 pounds sea bass (4 pieces)
1 cup all purpose flour
1 teaspoon salt
1 teaspoon pepper
2 tablespoons olive oil


To prepare sea bass:
Pat sea bass dry with paper towel.  Salt and pepper each side.  Dredge in flour. Heat two tablespoons olive oil in skillet over medium hot.  Add sea bass and cooked until insides are white and flaky and outsides are lightly brown.  (3-4 minutes per side)

To prepare sauce:
Put two tablespoons olive oil in large skillet.  Add garlic, onion, salt and pepper.  Saute until onions are translucent over medium heat.  While sautéing onion mixture, smoosh tomatoes with your hands into small pieces. When onions are finished add tomatoes and juices and sugar to pan and boil until sauce becomes thick (almost pasty).

Place sea bass on a plate and spoon sauce over the top.
