This salad is not only delicious, it is beautiful. I love all the different shades of green. I paired it with fried zuchini and a couple of filets last night. The key to this recipe is the balsamic vinegar. The vinegar pictured was a gift from my sister-in-law on her last visit. It is DELICIOUS. I was thinking about writing the company and asking if they could make lollipops out of it. You can purchase your own at Olive House. For the record, I am not being paid or given anything free to write this, I just LOVE the stuff. OMG, I just thought of something, bath products. Now that is a line they should offer. You just wait, when you smell and taste this stuff, you will lose your mind too.
one large green heirloom tomato, chopped into one inch pieces
half a medium cucumber, peeled and chopped into one inch pieces
five basil leaves, chopped
1/2 teaspoon olive oil
1/4 teaspoon good balsamic vinegar
1/4 teaspoon salt
pepper
Combine all ingredients in a bowl. It is best if it sits for about an hour before serving.
